3 large zucchinis, finely grated
5g salt
1 egg
60g all-purpose flour
60g Parmesan cheese
2.5g salt
ground black pepper to taste
oil for frying
1 tablespoon grated Parmesan cheese, or to taste
1 pinch salt
60ml sour cream, for topping
Step 1
In a bowl, combine the grated zucchini and salt. Allow to sit for 10 minutes, then transfer the mixture onto a clean dish towel or cheesecloth and squeeze out the excess moisture.
Step 2
In another bowl, whisk the egg, then add the flour, Parmesan cheese, salt, and pepper. Stir in the drained zucchini and mix thoroughly.
Step 3
Heat oil in a medium-sized pan over medium-high heat. Drop the zucchini batter by the tablespoonful into the hot oil. Fry until golden brown on both sides, about 5 minutes per batch. Transfer the fritters to a serving plate and sprinkle with Parmesan cheese and salt. Serve immediately with a dollop of sour cream.
