Ingredients

4 walleye fillets
125 ml all-purpose flour
2.5 ml garlic powder
2.5 ml ground black pepper
1 pinch salt
2 eggs, beaten
475 ml crushed saltine crackers
vegetable oil for frying
1 lemon, cut into wedges

Prepare the ingredients.

Check the walleye fillets for any remaining bones and skin. If needed, cut the fillets into manageable pieces.

In a shallow bowl, mix the flour, garlic powder, pepper, and salt. In a separate shallow bowl, place the beaten eggs. Spread the cracker crumbs on a plate.

Heat the vegetable oil in a deep fryer or large cast iron skillet to 190°C (375°F).

Coat the fillets by dipping them into the flour mixture, then the beaten egg, and finally the cracker crumbs, ensuring an even coating. Place the coated fillets on a plate.
Step 6
Using tongs, carefully lower 2 fillets into the hot oil. Fry until golden brown, about 3 minutes per side. Transfer to a paper towel-lined plate. Repeat with the remaining fillets. Serve with lemon wedges.
