Step 1
Prepare a baking dish by lining it with parchment paper. Place the baking soda in a small bowl and have a heat-proof spatula ready.

In a saucepan with a candy thermometer attached, whisk together the sugar, corn syrup, water, and honey. Heat over medium heat until the mixture becomes thinner but still cloudy. Let it bubble until the mixture clears and the thermometer reaches 150°C (300°F).
Step 3
Remove the saucepan from the heat and quickly whisk in the baking soda until just combined.
Step 4
Pour the mixture into the lined dish without spreading or compressing it to preserve the bubbles. Let it cool completely for at least 30 minutes.
Step 5
Lift the candy from the pan using the parchment paper, then break it into individual pieces by rapping it against the counter and using your fingers.
