500 g all-purpose flour
400 g sugar
50 g cocoa powder
10 g baking powder
5 g baking soda
5 g salt
475 ml boiling water
115 g butter, softened
2 eggs, lightly beaten
10 ml vanilla extract
120 g chopped nuts (optional)
30 g powdered sugar (optional)
Step 1
Preheat the oven to 180°C (350°F) and grease a 23x33 cm (9x13-inch) baking dish.
Step 2
In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Stir until well mixed.
Step 3
In a separate bowl, combine the boiling water and butter, and stir until the butter is melted. Let it cool for about 5 minutes. While stirring briskly, slowly add the beaten eggs. Once the egg and butter mixture is well blended, stir in the vanilla extract.
Step 4
Add the wet mixture to the dry mixture and beat for about 2 minutes. Stir in the chopped nuts, if using.
Step 5
Pour the batter into the prepared pan and bake in the center of the preheated oven for 30 to 35 minutes, or until a wooden pick inserted in the middle of the cake comes out clean.
Step 6
Allow the cake to cool completely on a wire rack for about 15 minutes. Once cooled, place the powdered sugar in a mesh sieve or sifter, and dust the cake with powdered sugar, if desired. Cut into squares and serve.
