180 g all-purpose flour
5 g baking soda
5 g baking powder
3 g salt
120 g applesauce
120 g plain low-fat Greek yogurt
80 g white sugar
1 egg
3.7 g vanilla extract
90 g dark chocolate chips
Step 1
Preheat the oven to 200°C (400°F). Prepare 9 muffin wells with cupcake liners or nonstick spray.
Step 2
In a medium bowl, whisk together the drink mix, flour, baking soda, baking powder, and salt until well combined.
Step 3
In a large bowl, whisk together applesauce, yogurt, sugar, egg, and vanilla. Add the flour mixture and mix until just combined. Fold in the chocolate chips. Divide the batter evenly into the prepared muffin wells.
Step 4
Bake in the preheated oven for 7 minutes. Then reduce the heat to 175°C (350°F) and continue baking for 10-12 minutes, or until the center of the muffins springs back when lightly pressed.
