Ingredients

3 large eggs
1 (14 oz) can sweetened condensed milk
60 ml fresh lemon juice
4 tsp lemon zest (optional)
150 g self-rising flour

Directions

Step 1
Preheat the oven to 175°C (350°F). Grease a 23x13 cm (9x5 inch) loaf pan with nonstick spray, line the bottom and sides with parchment paper, and spray again with nonstick cooking spray. Set aside.
Step 2
In a bowl, whisk together eggs, sweetened condensed milk, lemon juice, and lemon zest. Add the flour and mix until just combined. Pour the batter into the prepared loaf pan.
Step 3
Bake in the preheated oven for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely on a wire rack before removing it from the pan.
