5 cups (600g) chopped fresh rhubarb
3 cups (600g) white sugar
1 (85g) package strawberry flavored Jell-O®
Step 1
In a large saucepan or stockpot, combine the fresh rhubarb and sugar. Cover and let it sit overnight.
Step 2
The next day, bring the rhubarb and sugar to a boil over medium heat. Let it simmer for 12 minutes, stirring constantly. Remove from heat and stir in the dry gelatin mix. Transfer the jelly to sterilized jars and refrigerate.
