Ingredients

100g kasseri cheese
15ml water, or as needed
60g all-purpose flour, or as needed
15ml olive oil
30ml brandy, at room temperature
0.5 lemon, or to taste
15g freshly chopped Italian parsley

Directions

Step 1
Brush both sides of the kasseri cheese with water, then coat both sides in flour, ensuring complete coverage.
Step 2
Heat a well-seasoned cast iron skillet over medium-high heat until smoking, then add olive oil. Carefully place the floured cheese in the hot oil and cook until the cheese starts to ooze and forms a golden-brown crust, about 2 minutes. Quickly flip the cheese over with a spatula and fry until the bottom is golden brown, about 30 seconds more.
Step 3
Remove the skillet from the heat and place it on a napkin-lined plate. Pour the brandy over the cheese in the skillet. Ignite the brandy using a fireplace lighter. Squeeze some lemon juice on top to extinguish the flames and garnish with parsley.
