Ingredients

120 ml vegetable oil
60 ml cider vinegar
1 tbsp garlic powder
5 ml ground black pepper
2.5 ml salt
2.5 ml dried basil
2.5 ml dried thyme
4 skinless, boneless chicken breast halves
4 large potatoes, peeled and cut into 0.5 cm slices
2 large onions, cut into 0.5 cm thick slices
2 large green bell peppers, cut into 0.5 cm strips
2 cups sliced button mushrooms

Directions

Step 1
Preheat an outdoor grill to medium-high heat.
Step 2
In a bowl, combine vegetable oil, cider vinegar, garlic powder, black pepper, salt, basil, and thyme; set aside.
Step 3
Place a 30x30 cm square of aluminum foil on a flat surface. Put 1 chicken breast in the center of each square and top with potatoes, onions, bell peppers, and mushrooms. Spoon 1/4 of the sauce onto each chicken breast. Fold the foil over the ingredients to form four sealed packets.
Step 4
Grill the packets on the preheated grill until the chicken is thoroughly cooked and tender, about 30-40 minutes. Use an instant-read thermometer to check for a minimum internal temperature of 74°C.
Step 5
Serve the grilled chicken parcels hot, straight from the foil.
