500 ml water
185 g quinoa
1 package (340 g) frozen corn and black bean vegetable blend (e.g. Archer Farms®)
Step 1
In a saucepan, bring water and quinoa to a boil. Reduce the heat to medium-low, cover, and let it simmer for 15 to 20 minutes until the quinoa is tender and the water is absorbed.
Step 2
In a microwave-safe bowl, heat the vegetable blend in the microwave for about 5 minutes until warmed through. Then, stir the vegetable blend into the cooked quinoa.
