Ingredients

2 tbsp olive oil
2 cups sliced Baby Bella mushrooms
1/2 red bell pepper, sliced
1/2 green bell pepper, sliced
1/2 small onion, peeled and vertically sliced
1 lb ground turkey
2 cloves garlic, minced
Sliced green onions and toasted sesame seeds for garnish
3 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp lime juice
2 tbsp brown sugar
1 tbsp sesame oil
1 tbsp cornstarch

Directions

Step 1
In a small bowl, whisk together soy sauce, rice vinegar, lime juice, brown sugar, sesame oil, and cornstarch; set aside.
Step 2
In a large skillet over medium heat, heat 1 tablespoon of oil. Add the mushrooms, red and green bell peppers, and onion. Cook until the vegetables are tender, about 5 to 6 minutes. Remove to a plate.
Step 3
Add the remaining tablespoon of oil to the skillet. Add ground turkey and cook until lightly browned and cooked through, about 5 to 6 minutes. Stir in garlic and cook until fragrant, about 30 seconds to 1 minute.
Step 4
Reduce the heat to medium-low, return the vegetables to the skillet, give the sauce a good stir, and pour it over the meat and veggies. Stir until everything is well coated and simmer until the sauce is slightly thickened, about 2 minutes.
Step 5
Taste and adjust seasoning. Garnish with green onions and sesame seeds, and serve immediately.
