Ingredients

1 package (7g) active dry yeast
450g all-purpose flour, divided
240ml warm water (41°C)
2 large eggs
45g butter, melted
45g white sugar
7g salt
5ml olive oil
15ml milk
5g sesame seeds, or as needed

Directions

Step 1
In a large stand mixer bowl, combine the yeast, 60g of flour, and warm water. Whisk until smooth and let it sit for 10-15 minutes until foamy.

Whisk in 1 egg, melted butter, sugar, and salt. Add the remaining flour (about 375g).

Attach the dough hook and knead the dough on low speed for 5-6 minutes. Add a little more flour if the dough is too sticky.

Transfer the dough to a floured surface and shape it into a smooth, round ball. Place it in an oiled bowl, cover with foil, and let it rise for about 2 hours until doubled in size.

Line a baking sheet with parchment paper.

Flatten the dough on a floured surface and cut it into 8 pieces. Shape each piece into a round bun and place them on the prepared baking sheet. Let them rise for about 1 hour until doubled in size.
Step 7
Preheat the oven to 190°C.
Step 8
Beat the remaining egg with milk and brush the buns lightly. Sprinkle sesame seeds on top.
Step 9
Bake for 15-17 minutes until lightly browned. Let the buns cool completely before serving.
