Step 1
1. Place the eggs in a saucepan and cover them with cold water. Place the pan over high heat. When the water starts to simmer and the eggs dance around a little, turn off the heat, quickly cover the pan with a lid, and let it stand for 17 minutes. Avoid peeking.

2. Pour out the hot water and run cold water over the eggs. Drain and refill the pan with cold water, allowing the eggs to cool for about 20 minutes.

3. Peel the eggs under running water.
