Ingredients

250 g new potatoes, quartered
150 g fresh green beans, rinsed, trimmed, and blanched
1 can (140 g) tuna
1/2 onion, thinly sliced
60 ml pitted nicoise olives
60 ml chopped fresh parsley
250 g mixed salad greens
240 ml lemon vinaigrette
3 hard-cooked eggs, quartered
3 roma (plum) tomatoes, thinly sliced
4 anchovy filets
15 g capers

Directions

Step 1
Start by boiling a large pot of salted water. Add the potatoes and cook until they are tender but still firm, about 15 minutes. Drain and let them cool.
Step 2
In a large bowl, combine the potatoes, green beans, tuna, onion, olives, and parsley. Refrigerate the mixture for 2 to 4 hours.
Step 3
In a salad bowl, toss the mixed greens with the lemon vinaigrette. Then, top the greens with the chilled potato mixture. Garnish with eggs, tomatoes, anchovies, and capers.
