Fresh Fava Bean and Vegetable Salad
A quick and refreshing salad featuring fava beans, tomatoes, onion, cucumber, and a zesty dressing of lemon, olive oil, and parsley. Perfect as a side dish for Middle Eastern cuisine.
1 can (540g) fava beans, drained
2 medium tomatoes, chopped
1 small onion, diced
1 cucumber, diced
2 cloves garlic, minced
25g fresh parsley, chopped
1 lemon, juiced
45ml olive oil
1 tsp ground cumin
Salt and black pepper to taste
Step 1
In a salad bowl, combine the fava beans, tomatoes, onion, and cucumber. Add the garlic, parsley, lemon juice, and olive oil. Season with cumin, salt, and pepper. Toss to combine.
