2.3 kg leg of lamb
4 cloves garlic, sliced
salt, to taste
ground black pepper, to taste
30 g fresh rosemary
Step 1
Preheat the oven to 175°C (350°F).
Step 2
Make deep slits on the top of the leg of lamb, about 7-10 cm apart. Insert the garlic slices into the slits. Season the lamb generously with salt and pepper.
Step 3
Place the lamb on a roasting pan and tuck several sprigs of fresh rosemary under and on top of the lamb.
Step 4
Roast in the preheated oven for 1 hour and 45 minutes to 2 hours, or until a meat thermometer inserted into the center of the lamb reads at least 57°C (135°F) for medium-rare to medium doneness.
Step 5
Cover the lamb with aluminum foil and let it rest for at least 10 minutes before carving.
