450g tiny new red and/or yellow potatoes, halved
340g green beans, trimmed
1 small red onion, cut into 2.5cm wedges
30ml olive oil
3/4 tsp kosher salt
1/2 tsp black pepper
450g beef sirloin steak, cut into 4cm pieces
15ml Worcestershire sauce
30g butter
1 clove garlic, grated
2 tsp chopped fresh rosemary or parsley
Step 1
Position an oven rack about 15cm from the heat source. Preheat the oven to 230°C. Lightly grease a 25x38cm baking sheet.
Step 2
In a medium bowl, mix together the potatoes, green beans, onion, 15ml of oil, and 3/4 tsp salt and 1/2 tsp pepper. Spread the vegetable mixture evenly on the prepared pan.
Step 3
Roast the vegetables in the center of the preheated oven, stirring halfway through, for 15 minutes.
Step 4
In the same bowl, toss the steak with Worcestershire sauce, the remaining 15ml of oil, 1/2 tsp salt, and 1/4 tsp pepper.
Step 5
Preheat the broiler. Push the vegetables to the edges of the pan and arrange the steak in the center. Broil, turning the steak halfway through, until it reaches the desired doneness (60 to 63°C for medium), for 6 to 8 minutes.
Step 6
In a small saucepan over low heat, melt the butter. Add the garlic and cook until fragrant, about 30 seconds. Drizzle the garlic butter over the steak and vegetables, then sprinkle with rosemary.
