2 liters all-purpose flour
85 grams compressed fresh yeast

15 ml lukewarm milk
375 ml milk

400 grams chopped blanched almonds
300 grams raisins
90 grams candied lemon peel
90 grams chopped candied orange peel

Step 1
Prepare all the ingredients.
Step 2
In a large bowl, place the flour and create a well in the center. Crumble the fresh yeast into the well, sprinkle in the sugar, and add the lukewarm milk. Cover and allow it to rise in a warm place for 15 minutes.

In a saucepan over low heat, warm the milk and 225 grams of unsalted butter until the butter is melted.
Step 4
Pour the milk-butter mixture over the yeast mixture. Add 200 grams of sugar, egg yolks, and salt. Knead until a soft dough forms. Cover with a clean dish towel and let it rise in a warm place until it doubles in volume, about 1 hour.

Line a baking sheet with parchment paper.

Combine the almonds, raisins, candied lemon peel, and candied orange peel, then fold them into the dough. Shape the dough into a loaf and place it on the prepared baking sheet. Cover and let it rest until the loaf has risen slightly again, about 30 minutes.
Step 7
Preheat the oven to 190°C.
Step 8
Bake in the preheated oven until a toothpick inserted in the middle comes out clean, for 45 to 60 minutes. Remove from the oven. Immediately brush the hot bread with 30 ml melted butter and dust it with confectioners' sugar.
