2 tbsp soft unsalted butter
4 large thick slices French bread
125 g Greek yogurt
1 tbsp honey
1/4 tsp vanilla extract
1 tsp lemon zest
1 large egg
1/4 tsp kosher salt
Step 1
Preheat the oven to 200°C (400°F). Line a baking sheet with a silicone mat or parchment paper.
Step 2
Butter one side of each bread slice and place them butter-side-down on the prepared baking sheet.
Step 3
In a mixing bowl, whisk together the yogurt, honey, vanilla extract, lemon zest, egg, and salt. Spoon the custard mixture over the bread, ensuring it reaches the edges and pressing down lightly to help the bread absorb the custard.
Step 4
Bake in the preheated oven until the toast turns golden brown, about 20 to 25 minutes.
Step 5
While the toast is baking, mix blueberries, strawberries, maple syrup, and lemon juice in a bowl and set aside.
Step 6
Serve the custard toast immediately, topped with the fresh fruit mixture.
