Ingredients

0.125 g saffron threads
15 ml boiling water
60 g all-purpose flour
1.5 tsp kosher salt, or more to taste
0.5 tsp ground turmeric
0.25 tsp freshly ground black pepper
0.25 tsp onion powder
0.25 tsp garlic powder
675 g skinless cod fillets, about 2.5 cm thick
60 ml grapeseed oil
25 ml orange juice
1 orange, cut into wedges
1 lime, cut into wedges

Directions

Step 1
In a small bowl, crush saffron threads into a powder using a mortar and pestle. Stir in boiling water, cover, and set aside.
Step 2
On a large plate, mix together flour, salt, turmeric, pepper, onion powder, and garlic powder. Spread the mixture evenly on the plate.
Step 3
Pat the fish fillets dry with paper towels. Cut them into 7.5 cm pieces and season with salt. Dredge the fish in the flour mixture until all sides are coated.
Step 4
Heat oil in a large pan over medium to medium-high heat. Add the fish and fry on one side until golden, about 7 minutes. Flip the fish, drizzle saffron water over the top, and fry the other side until golden and the fish flakes easily with a fork, about 5 more minutes.
Step 5
Transfer the fish to a serving platter. Drizzle orange juice over the top and serve with orange and lime wedges.
