Step 1
Preheat the oven to 190°C (375°F). In a mixing bowl, whisk together flour, 100g sugar, baking powder, and salt. Set aside. Grease a 23x33 cm (9x13-inch) baking dish.

In another bowl, beat the egg, butter, and milk until smooth. Stir in the flour mixture until moistened, then spread the dough into the prepared baking dish. In a separate bowl, stir together the rhubarb, 400g sugar, and boiling water; pour the mixture into the baking dish.
Step 3
Bake in the preheated oven for about 40 minutes, or until the dough has set and the rhubarb is bubbling.
