125 g white sugar
15 g cornstarch
240 ml water
450 g strawberries, hulled
30 g butter, diced
120 g all-purpose flour
15 g white sugar
7.5 g baking powder
2.5 g salt
45 g butter
120 ml heavy whipping cream
Step 1
Preheat the oven to 205°C. Grease a 2-quart baking dish.
Step 2
In a saucepan, combine sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until thick and hot. Stir in strawberries, and remove from heat. Pour the mixture into the baking dish and dot with diced butter.
Step 3
In a bowl, sift together flour, sugar, baking powder, and salt. Cut in butter with 2 knives or a pastry blender until the mixture resembles coarse crumbs. Stir in the cream until the mixture is fairly soft. Spoon the mixture on top of the berries.
Step 4
Bake in the preheated oven until the cobbler is golden brown and the filling is bubbly, about 25 minutes.
