450 g prepared pizza dough
2 tomatoes, seeded and chopped
2 cloves garlic, minced
4 basil leaves, torn
10 ml olive oil
Pinch of garlic powder
150 g fresh mozzarella cheese, sliced
15 ml balsamic glaze
Step 1
Preheat a gas grill with all burners on High for 10 to 15 minutes. Shape the pizza dough into a round crust.
Step 2
In a small bowl, mix together the tomatoes, garlic, and torn basil. Season with salt and pepper, and set aside.
Step 3
Reduce the heat on half of the grill burners to Low to create areas of direct and indirect heat.
Step 4
Carefully place the dough on the grill over direct heat, close the cover, and grill until the bottom is just barely cooked and shows char marks, for 1 to 3 minutes.
Step 5
Using tongs, flip the pizza dough over and move it to the indirect heat. Brush the dough with olive oil, sprinkle with garlic powder, and place the mozzarella slices on top.
Step 6
Grill until the cheese is melted, about 3 minutes. Carefully remove the pizza from the grill.
Step 7
Top the grilled pizza with the tomato bruschetta and drizzle with balsamic glaze. Slice into wedges and serve.
