900 g red potatoes
30 ml extra-virgin olive oil
120 ml extra-virgin olive oil
15 ml apple cider vinegar
5 g kosher salt
5 g ground black pepper
1 clove garlic, chopped
2.5 g white sugar
6 slices cooked bacon, chopped
4 green onions, chopped
30 ml minced fresh parsley
Step 1
Preheat the grill to medium heat and lightly oil the grate.
Step 2
In a bowl, toss the potatoes with 30 ml of olive oil to coat them.
Step 3
Grill the potatoes until tender, about 30 minutes. Let them cool for 10 to 15 minutes, then cut them into quarters.
Step 4
In a bowl, whisk together 120 ml olive oil, vinegar, salt, black pepper, garlic, and sugar to make the dressing. Toss the potatoes, bacon, green onions, and parsley with the dressing until evenly coated.
