450 g dried great northern beans
450 g cooked ham, diced
1 (283 g) ham bone
1 (227 g) can tomato sauce
2 large onions, chopped
4 stalks celery, sliced
1 bouquet garni
15 g dried parsley
1.25 ml baking soda
salt and ground black pepper to taste
water, as needed
3 medium potatoes, peeled and cubed
2 medium carrots, sliced
Step 1
In a large container, soak the beans in cool water, covering them by several inches, for 8 hours to overnight.
Step 2
Strain and rinse the beans. In a large stockpot, combine the beans, ham, ham bone, tomato sauce, onions, celery, bouquet garni, parsley, baking soda, salt, and pepper. Add enough water to cover and bring to a boil over medium-high heat.
Step 3
Reduce the heat and simmer for 2 hours. Add the potatoes and carrots, and continue to simmer until tender, about 20 minutes. Season with additional salt if needed. Remove the ham bone before serving.
