450 g dry navy beans
2 liters water
300 g cubed cooked ham
2 medium potatoes, peeled and diced
3 carrots, peeled and shredded
3 stalks celery, sliced
1 medium onion, diced
Step 1
In a large container, cover the navy beans with several inches of cool water and let them soak for 6 hours to overnight.
Step 2
Drain the soaked beans and transfer them to the slow cooker. Add enough water to cover the beans, then stir in the ham, potatoes, carrots, celery, and onion.
Step 3
Cover the slow cooker and cook on High for 3 hours and 30 minutes. Then, switch to Low and continue cooking for at least 6 hours and 30 minutes. The longer it cooks, the more flavorful it becomes.
