Homemade Crispy Fish Burger

Ingredients

Canola oil, for frying
4 skinless cod fillets (about 113 g each and 2.5 cm thick)
5 g kosher salt, divided
1 large egg
15 g mayonnaise
15 g Dijon mustard
8 g corn starch
8 g all-purpose flour
1 g paprika
100 g panko (Japanese-style breadcrumbs)
4 brioche hamburger buns, split
4 slices processed American cheese (14 g each)
10 ml tap water
McDonald's Tartar Sauce
Cooked shoestring fries, for serving

Directions

Step 1
Fill a large Dutch oven with 5 cm of canola oil and heat it to 182°C. Preheat the oven to 93°C. Place a wire rack inside a large rimmed baking sheet and set aside.
Step 2
Pat the cod fillets dry with paper towels, and season evenly with 2.5 g of salt. In a medium shallow bowl, whisk together the egg, mayonnaise, Dijon mustard, corn starch, flour, paprika, and the remaining 2.5 g of salt. Place the panko in another shallow bowl. Dip each fillet into the egg mixture, then coat with panko. Place on a large plate and repeat with the remaining fillets.
Step 3
Carefully add 2 fillets to the hot oil and fry for 3 to 5 minutes until golden brown and crispy. Remove the fillets from the oil and place them on the prepared wire rack. Keep them warm in the preheated oven while frying the remaining fillets.
Step 4
Place 2 buns at a time on a large microwavable plate and top each bun with a cheese slice. Lightly sprinkle a small paper towel with water and place it in a small microwavable bowl with the bottom buns. Cover the plate with an inverted microwavable glass bowl. Microwave on HIGH until the buns are steamy and the cheese is melted, for about 15 to 20 seconds. Carefully remove the buns from the plate, place the top buns on the same plate, and microwave on HIGH for 10 to 15 seconds.
Step 5
Immediately top the bottom buns with a fish fillet and drizzle 30 ml of McDonald's Tartar Sauce on top. Cover with the top buns and serve immediately with shoestring fries. Repeat with the remaining buns and fish fillets.
