Ingredients

1 bunch Lacinato kale
1 bunch mustard greens
10 tbsp Irish butter, divided
180 ml sliced green onions (white and light green parts only)
2 cloves garlic, minced
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
30 ml seasoned rice vinegar
8 thick slices French bread
225 g Irish white Cheddar cheese, sliced

Directions

Step 1
Preheat an oven to 350°F (175°C).
Step 2
Cut the thick stems off the kale and mustard greens, then slice them into bite-sized pieces.
Step 3
Melt 4 tablespoons of Irish butter in a large skillet over medium heat. Add the green onions and garlic. Cook and stir until fragrant, about 2 minutes.
Step 4
Add the kale and mustard greens to the skillet. Season with salt, black pepper, and cayenne pepper. Cook and stir until the greens start to wilt, about 5 minutes. Pour in the seasoned rice vinegar and continue cooking until the greens are tender, about 10 minutes.
Step 5
Butter one side of each slice of bread with the remaining Irish butter. Place 4 slices butter-side down onto a baking sheet. Top with the cooked greens and Cheddar cheese slices. Finish with the remaining bread slices, butter-side up.
Step 6
Bake in the preheated oven until the bread is golden brown and the cheese is melted, about 10 minutes.
Step 7
Slice the sandwiches in half and serve warm.
