Ingredients

4 cups (480g) all-purpose flour
180g white sugar
1 tsp salt
1 tsp baking powder
1 tsp baking soda
115g butter, at room temperature
225g raisins
360ml buttermilk, at room temperature
3 eggs, at room temperature

Directions

Step 1
Preheat the oven to 175°C (350°F) and grease a 9-inch cake pan.
Step 2
In a large bowl, combine flour, sugar, salt, baking powder, and baking soda. Use a pastry cutter to gently blend the butter into the flour mixture. Stir in the raisins. In a separate bowl, whisk together the buttermilk and eggs, then lightly beat the egg mixture into the flour mixture. Transfer the dough into the prepared cake pan.
Step 3
Bake for 45 minutes to 1 hour, or until the bread has risen and the top is golden brown. To check for doneness, insert a knife into the center of the bread; it should come out clean. Allow the bread to cool in the pan on a wire rack for 10 minutes before removing. Serve the bread warm.
