Ingredients

1 lemon, halved
2 small artichokes
1 tsp water
1 tsp extra-virgin olive oil
1/4 tsp salt
1/4 tsp ground black pepper
1/4 cup butter
1 clove garlic, grated
1 tbsp chopped fresh parsley

Directions

Step 1
Preheat the oven to 220°C (425°F).
Step 2
Trim the artichokes by cutting 1 inch off the tips, trimming the stems and sharp leaf tips, and halving them lengthwise. Use a spoon to scoop out the chokes. Rub the cut sides with half a lemon and drizzle with water and extra-virgin olive oil. Sprinkle with salt and black pepper.
Step 3
Cut the remaining lemon half into 4 slices. Place a lemon slice on top of each artichoke half and tightly wrap each half in foil. Arrange the foil packets in a baking pan. Bake until the artichokes are tender at the base, about 45 minutes.
Step 4
In a small saucepan, melt the butter and garlic over low heat. Stir in the parsley. Serve the baked artichokes with lemon wedges and herb butter, and sprinkle with black pepper.
