120 ml unsalted butter, cubed

Prepare all the ingredients.

In a 2-quart saucepan, combine the lemon juice, sugar, butter, eggs, and lemon zest.

Cook the mixture over medium-low heat, whisking constantly, until it thickens and bubbles start to appear on the surface, about 5 to 6 minutes.

Remove the saucepan from the heat and transfer the curd to a large bowl. Place a piece of plastic wrap directly on the surface to prevent a skin from forming. The curd will continue to thicken as it cools. Refrigerate the curd for later use.
