Ingredients

4 eggs, separated
80 ml lemon juice
15 ml butter
5 ml lemon zest
360 g white sugar
120 g sifted all-purpose flour
2.5 ml salt
360 ml milk

Directions

Step 1
Preheat the oven to 175°C. Lightly grease an 20x20 cm square baking dish.
Step 2
In a large bowl, beat egg yolks, lemon juice, butter, and lemon zest with an electric mixer until thick and lemon-colored.
Step 3
Combine sugar, flour, and salt. Add alternately with milk to the lemon mixture, beating well after each addition.
Step 4
In a separate bowl, beat egg whites until stiff.
Step 5
Gently blend egg whites into the batter on low speed with an electric mixer. Pour into the prepared baking dish.
Step 6
Place a pan of hot water in the preheated oven. Set the baking dish into the pan and bake for 45 minutes.
Step 7
For best results, serve warm.
