115 g full-fat cream cheese, at room temperature
200 g firmly packed brown sugar
70 g unsalted butter, melted and cooled slightly
1 egg, at room temperature
1 1/2 tsp vanilla extract
1/4 tsp almond extract
155 g all-purpose flour
75 g malted milk powder
3/4 tsp salt
1/4 tsp baking soda
150 g white chocolate chips
50 g rainbow jimmie sprinkles
Step 1
Preheat the oven to 175°C (350°F). Line an 20x20 cm (8x8 inch) square pan with parchment paper, leaving an overhang on all sides.
Step 2
In a large bowl, beat together the cream cheese, brown sugar, and melted butter until smooth. Add the egg, vanilla extract, and almond extract, and mix until thoroughly combined. Add the flour, malted milk powder, salt, and baking soda, and mix until just incorporated. Fold in the white chocolate chips and sprinkles.
Step 3
Spread the batter evenly into the prepared pan.
Step 4
Bake in the preheated oven until the bars are golden and just set, for 25 to 30 minutes. Allow the bars to cool completely in the pan before removing them using the parchment overhang. Cut into 16 bars.
