Ingredients

1 liter buttermilk
125 ml maple syrup
1 egg
1 tsp granulated garlic
4 skin-on, bone-in chicken thighs
125 g all-purpose flour
60 g tapioca flour
1 tbsp salt
1 tsp sweet paprika
0.5 tsp smoked paprika
1 tsp granulated onion
0.25 tsp ground black pepper
0.25 tsp cayenne pepper
0.5 tsp granulated garlic
0.5 tsp honey powder (e.g., Savory Spice®)

Directions

Step 1
In a large resealable plastic bag, combine buttermilk, maple syrup, egg, and granulated garlic. Add the chicken thighs, seal the bag, and refrigerate for at least 1 hour or overnight.
Step 2
Prepare the dry mix by combining flour, tapioca flour, salt, sweet paprika, smoked paprika, granulated onion, black pepper, cayenne pepper, granulated garlic, and honey powder in a shallow bowl.
Step 3
Preheat the air fryer to 190°C (380°F).
Step 4
Remove the chicken thighs from the marinade and discard the excess. Dredge the thighs through the dry mix, shaking off any excess, and place them skin-side down in the air fryer basket.
Step 5
Air fry for 12 minutes, then flip the thighs and continue cooking until an instant-read thermometer inserted into the center reads at least 74°C (165°F), about 13 minutes more.
