Ingredients

180 g uncooked short-grain white rice
350 ml water
475 ml 2% milk
5 ml maple flavored extract
100 g white sugar
2.5 ml ground nutmeg
2.5 ml ground cinnamon
1 pinch ground cloves
15 g butter

Directions

Step 1
In a saucepan over medium heat, combine the rice and water. Bring to a boil, then reduce the heat and let it simmer for 20 minutes or until all the water is absorbed.
Step 2
Stir in 415 ml of the milk, sugar, and maple flavoring. Bring to a boil, then let it simmer over medium heat until thick and creamy, about 15 minutes. Stir in the remaining milk, nutmeg, cinnamon, cloves, and butter. Cook over low heat for another 5 minutes, stirring constantly. Pour the pudding into a casserole dish or serving bowls and let it stand for 5 minutes before serving. It can also be chilled and served cold.
