Matzo Breakfast Patties

Ingredients

0.5 tsp vegetable oil
475 ml hot water
2 (6 inch) matzo sheets
2 large eggs
0.125 tsp kosher salt
15 g butter, divided
kosher salt to taste

Directions

Step 1
In a nonstick frying pan, heat vegetable oil over low heat.
Step 2
In a bowl, pour hot water over matzo sheets broken into small chunks and soak for about 2 minutes.
Step 3
In a separate bowl, whisk eggs and 1/8 teaspoon kosher salt. Strain and shake excess water from matzo, then stir into the egg mixture.
Step 4
Remove heated oil from the frying pan and add 7.5 g of butter to the hot pan.
Step 5
Pour the matzo and egg mixture into the hot butter. Cover and cook until a patty forms, about 10 minutes.
Step 6
Transfer the matzo patty onto a plate.
Step 7
Add the remaining 7.5 g of butter to the hot pan.
Step 8
Place a second plate over the matzo patty, flip it over, and slide it into the pan with hot butter. Cover and cook until the bottom is browned, about 8 minutes. Remove from heat and season with kosher salt.
Step 9
Serve hot and enjoy!
