6 matzo sheets
4 eggs, lightly beaten
1 (24 ounce) carton cottage cheese
1 (8 ounce) package shredded mozzarella cheese, divided
1 (28 ounce) jar marinara sauce
Step 1
Preheat the oven to 175°C (350°F).
Step 2
In a large bowl, soak the matzo sheets in hot water until tender, about 30 seconds, then drain them.
Step 3
In another bowl, mix the eggs, cottage cheese, and half of the mozzarella cheese. Pour 1/2 cup of marinara sauce into the bottom of a 23x33 cm (9x13-inch) baking dish. Place 2 matzo sheets over the sauce, then pour another layer of sauce over the matzo. Spread half of the cheese mixture on top, then another layer of sauce. Continue layering until all the matzo sheets are used, finishing with a layer of sauce. Sprinkle the remaining mozzarella cheese over the top.
Step 4
Bake in the preheated oven until the cheese is melted and the sauce is bubbly, about 30 to 40 minutes.
