225 g ground beef
1 medium onion, diced
1 clove garlic, minced
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
1 can (400 g) refried beans
4 (25 cm) flour tortillas
120 ml salsa
100 g shredded Cheddar cheese
100 g shredded Monterey Jack cheese
2 green onions, chopped
2 roma (plum) tomatoes, diced
60 ml thinly sliced jalapeno pepper
60 ml sour cream
Step 1
Preheat the oven to 175°C. Grease 2 pie plates with non-stick cooking spray.
Step 2
In a skillet over medium heat, cook ground beef, onion, and garlic until beef is browned and crumbly. Drain and discard grease. Season beef with chili powder, cumin, paprika, salt, and pepper.
Step 3
Place one tortilla in each pie plate, and spread a layer of refried beans. Add half of the seasoned ground beef on each, then cover with another tortilla. Bake until tortillas are crisp, about 10 minutes.
Step 4
Remove pizzas from the oven and let them cool slightly. Spread half of the salsa over each top tortilla. Top each pizza with half of the Cheddar and Monterey Jack cheeses, tomatoes, green onions, and jalapeño slices.
Step 5
Return pizzas to the oven and bake until cheese is melted, about 5 to 10 minutes. Let pizzas cool slightly before slicing each into 4 pieces.
