1 tsp butter, or as needed
180 g freshly grated Parmesan cheese
80 g butter, softened
60 ml mayonnaise
60 ml chopped green onion
45 ml lemon juice
2 tsp dried dill weed
3 g salt
1.25 g ground black pepper
2 dashes hot pepper sauce (such as Tabasco®)
900 g cod fillets
Step 1
Preheat the oven's broiler and place the rack about 15 cm from the heat source. Line a baking sheet with aluminum foil and lightly coat it with 5 g of butter.
Step 2
In a medium bowl, combine Parmesan, softened butter, mayonnaise, green onion, lemon juice, dill, salt, black pepper, and hot sauce. Mix until well combined and set aside.
Step 3
Arrange the cod fillets in a single layer on the prepared baking sheet.
Step 4
Broil the fish until it flakes easily with a fork, about 7 to 8 minutes.
Step 5
Carefully spread the Parmesan mixture over the fish and return it to the oven. Broil until the topping is bubbly and lightly browned, about 2 minutes more.
