12 eggs, at room temperature
Step 1
1. Place a steamer insert into a pot and fill with water to just below the bottom of the steamer.
2. Bring the water to just below a boil over medium heat.
3. Gently place the eggs in the steamer insert, cover the pot, and steam for 15 minutes.
4. Immediately transfer the eggs to a bowl of ice water until they are cool enough to handle.
5. Make a small crack on the large end of each egg and place the eggs back into the ice water for about 20 minutes.
6. Peel the eggs.
