Pineapple Marmalade Delight

Ingredients

1 large fresh pineapple, peeled, cored, and sliced
125 ml pineapple juice
125 ml brown sugar
1 (10 cm) cinnamon stick
2 whole cloves
60 ml lemon juice
15 g lemon zest

Directions

Step 1
In a blender, coarsely blend the pineapple.
Step 2
In a saucepan, combine pineapple juice, brown sugar, cinnamon stick, and cloves. Bring to a boil, then remove the cloves after boiling for 1 minute.
Step 3
Add the blended pineapple, lemon juice, and lemon zest to the saucepan. Bring to a boil, then reduce the heat to low. Cook until thickened, stirring every 10 minutes. This should take about 1 hour. Remove the cinnamon stick.
Step 4
While the marmalade is cooking, inspect a jar for cracks and rings for rust. Immerse them in simmering water until the marmalade is ready. Wash a new, unused lid and ring in warm soapy water.
Step 5
Spoon the hot pineapple marmalade into the sterile jar, filling it to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jar to remove any air bubbles. Wipe the rim with a moist paper towel to remove any residue. Seal the jar tightly with the lid and screw ring. Store the marmalade in a cool, dark area.
