1 large seedless watermelon, cubed (about 2 kg)
4 tomatoes, diced (about 600 g)
1 cup crumbled feta cheese
1 large sweet onion, thinly sliced
12 mint leaves, thinly sliced
60 ml olive oil
30 ml white balsamic vinegar
1 pinch coarse salt, to taste
1 pinch ground black pepper, to taste
Step 1
In a large bowl, gently combine the watermelon, tomatoes, feta cheese, onion, and mint.
Step 2
In a small bowl, whisk together the olive oil, vinegar, salt, and pepper. Drizzle the dressing over the salad and toss gently to coat.
