6 frozen Belgian waffles
680 g frozen chicken nuggets (e.g., Just Bare™ Lightly Breaded Chicken Breast Bites), slightly thawed
8 eggs
320 ml half-and-half
45 ml maple syrup, plus extra for serving
1/2 tsp Kosher salt
1/8 tsp cayenne pepper
60 g butter, melted
Step 1
Preheat the oven to 175°C (350°F) and lightly grease a 22x33 cm (9x13-inch) baking dish.
Step 2
Arrange the frozen waffles on a baking sheet and bake in the preheated oven until lightly toasted on each side, about 8 minutes in total. Remove from the oven and cut each waffle into 8 pieces. Then, arrange the waffle pieces in the prepared baking dish.
Step 3
If using larger chicken nuggets, cut them in half, leaving smaller pieces whole. Arrange the chicken pieces among the waffles in the baking dish.
Step 4
In a large bowl, whisk together the eggs, half-and-half, 30 ml of maple syrup, salt, and cayenne pepper until well combined and slightly frothy. Pour the egg mixture over the waffles and chicken. Cover the dish and let it stand for 15 minutes to allow the mixture to soak in before baking.
Step 5
Bake the casserole for about 1 hour, or until the eggs are set and the top is golden brown. Uncover the dish halfway through the baking time. Let it stand for 5 to 10 minutes before serving. Drizzle with melted butter and additional syrup.
Step 6
For an extra savory twist, sprinkle some cooked crumbled bacon on top before serving.
