900 g ricotta cheese
6 large eggs
450 g cooked ham, chopped
225 g Genoa salami, chopped
225 g mozzarella cheese, grated
115 g prosciutto, chopped
4 (9 inch) unbaked pie crusts
60 g grated Parmesan cheese
Step 1
Preheat the oven to 165°C (325°F).
Step 2
In a large mixing bowl, combine the ricotta and eggs using an electric mixer on low speed. Stir in the ham, salami, mozzarella, and prosciutto until well mixed.
Step 3
Line two 9-inch pans with pastry. Divide the ricotta mixture between the pans. Sprinkle each pie with Parmesan cheese, then cover with the top pastry. Crimp the edges and cut steam vents in the tops.
Step 4
Bake in the preheated oven until the crust is golden brown, about 1 hour. Allow the pies to cool on wire racks.
