30 ml soy sauce
15 ml oyster sauce
10 ml Worcestershire sauce
10 ml fish sauce
1.25 ml sesame oil
1 pinch cayenne pepper
60 g unsalted butter
8 cloves garlic, minced
170 g spaghetti
60 ml finely grated Parmigiano-Reggiano cheese
15 ml chopped green onion, or to taste
1 pinch red pepper flakes
Step 1
In a small bowl, combine soy sauce, oyster sauce, Worcestershire sauce, fish sauce, sesame oil, and cayenne pepper to create the secret sauce.
Step 2
Melt butter in a skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Quickly stir in the secret sauce and turn off the heat.
Step 3
Boil a large pot of lightly salted water. Cook spaghetti until al dente, about 12 minutes.
Step 4
Transfer the cooked spaghetti to the skillet using tongs, bringing some of the cooking water with it. Toss until well coated; stir in Parmesan cheese. Add more pasta water if needed to moisten the noodles.
Step 5
Plate the spaghetti and garnish with green onions and red pepper flakes.
