Ingredients

250g quinoa
350ml cold water
salt to taste
15ml vegetable oil
150g cubed fully cooked ham
75g diced red bell pepper
75g chopped green onion (white and green parts separated)
3 cloves garlic, minced
15ml rice vinegar
15ml soy sauce, or to taste
5g chile-garlic sauce (such as Sriracha®), or more to taste
5g sesame seeds, or to taste

Directions

Step 1
Rinse the quinoa under cold water for about 1 minute and then drain well.
Step 2
Place the quinoa into a saucepan and add 350ml cold water. Season with salt and bring to a boil. Reduce the heat to low, cover, and simmer until the quinoa is tender, about 15 minutes. Remove from the heat and let sit for 5 minutes, then fluff with a fork.
Step 3
Heat vegetable oil in a large skillet over medium heat. Add the ham, bell pepper, and the white parts of the green onion; cook until the ham begins to brown, about 5 minutes. Add the garlic and remove from the heat; stir until the garlic becomes aromatic, 1 to 2 minutes.
Step 4
Stir in the fluffed quinoa and return to the stove over medium-low heat. Cook, stirring occasionally, until warmed through, 2 to 3 minutes. Remove from the heat and add the vinegar, soy sauce, chile-garlic sauce, and sesame seeds. Garnish with the dark green parts of the green onion.
