Ingredients

cooking spray
680 g ground venison
225 g pork sausage (e.g., Jimmy Dean®)
1 onion, chopped
2 onion sandwich buns (e.g., S. Rosen's®)
2 large eggs
45 ml brandy (e.g., Christian Brothers®)
15 ml bacon grease
5 ml Worcestershire sauce
5 ml dried thyme
5 ml red pepper flakes
2.5 ml seasoned salt (e.g., LAWRY'S®)
2.5 ml garlic and herb seasoning (e.g., McCormick®)
2.5 ml finely ground black pepper
1.25 ml ground sage

Directions

Step 1
Preheat the oven to 175°C (350°F) and spray an 8x4-inch loaf pan with cooking spray.
Step 2
In a large bowl, thoroughly combine the venison, pork sausage, and chopped onion. Briefly run the onion buns under water, squeeze out the water, and break into small pieces. Add the pieces to the meat mixture and mix until fully incorporated.
Step 3
Add the eggs, brandy, bacon grease, Worcestershire sauce, thyme, red pepper flakes, seasoned salt, garlic and herb seasoning, black pepper, and sage to the meat mixture. Stir until well combined, then transfer the mixture to the prepared loaf pan.
Step 4
Bake in the preheated oven for 60 to 70 minutes, or until browned and the juices run clear. An instant-read thermometer inserted into the center should read at least 70°C (160°F).
