Ingredients

180 ml white sugar
45 ml all-purpose flour
950 g fresh serviceberries
60 ml water
30 ml lemon juice
1 (400 g) package double-crust pie pastry, thawed
15 ml unsalted butter, cut into pieces

Directions

Step 1
Prepare the ingredients.
Step 2
Preheat the oven to 425°F (220°C). In a bowl, mix together sugar and flour.
Step 3
In a large saucepan, simmer the serviceberries and water for 10 minutes. Stir in the lemon juice, then add the sugar mixture.
Step 4
Press one pie pastry into the bottom of a 9-inch pie pan. Pour the berry mixture into the pan and dot with butter.
Step 5
Cover with the second pie pastry, seal, and flute the edges.
Step 6
Bake in the preheated oven for 15 minutes. Reduce the oven temperature to 350°F (175°C) and bake until the crust is golden brown, about 35 to 45 minutes more.
