Slow Cooker Mixed Berry Delight
A delightful mixed berry compote that's incredibly simple to make. Just toss together frozen berries, sugar, orange juice, and zest in a slow cooker, and after an hour and a half, it's ready to enjoy!
6 cups (900g) frozen mixed berries
120g white sugar
60ml orange juice
1.5 tsp finely grated orange zest
2 tbsp cornstarch
30ml water
Step 1
In a slow cooker, combine the frozen berries, sugar, orange juice, and orange zest. Cover and cook on High until the mixture starts bubbling, about 1 1/2 hours.
Step 2
In a separate cup, dissolve the cornstarch in water. Stir the mixture into the berries and cover the slow cooker again. Cook until the compote thickens, which will take about 5 to 10 minutes. Serve the compote warm or at room temperature.
