4 ears corn on the cob, silks removed

30 grams butter, melted
15 grams chopped fresh cilantro
1 lime, zested
0.5 lime, juiced
1 teaspoon smoked paprika
salt and ground black pepper to taste

Prepare the ingredients.
Step 2
Soak the corn in their husks in a large pot of water for 2 hours. Also, soak the wood chips in water for about 30 minutes.
Step 3
Preheat a smoker to 120°C (250°F). Place the unhusked corn on wire racks and put them in the smoker. Add the wood chips as per the manufacturer's directions. Smoke the corn until it reaches your desired tenderness, which should take 60-75 minutes.
Step 4
In a small bowl, mix the melted butter, cilantro, lime zest, lime juice, and smoked paprika. Peel back the husks of the smoked corn and brush them with the butter mixture. Season with salt and pepper to taste.
